Full House

Ann and the kids and the dog got here Saturday night. (Insert big smile). I'm so thankful it's been so nice out these past few days. Sunday afternoon Nelson put up the blow up bouncer. They had a blast with that. I think Annie is going to be here for a couple weeks. It's so nice to have her here. She's doing some packing for us and she re-arranged the living room. Sometimes her OCD is nice to have around!

Nelson worked out on the eliptical on Sunday morning and has rued the decision ever since. I'm starting to wonder if he has more of a physical issue going on...maybe like fibromyalgia.

The family is meeting next Saturday night to discuss how things are goig with Ma'am and to make future plans. Wish I could be a fly on the wall at that meeting. She was so sore when she got up this morning it really impacted her mood and actions. She was quite saucy with me right in front of her granddaughter. It was a little surprising to her.

It was so nice out that Ma'am sat out on the porch this afternoon. That's after I swept. I was afraid she would take off the porch and go pick up sticks. When I left one of the daughters was there with her husband pruning the apple trees. They were going to keep an eye on her.

I went to workout after work. I love my Curves workout. I work hard. Tonight Annie and I are going to take a walk. Feel the burn!!!

As You Requested

Seafood Lasagna
From the Kitchen of Becky Echelberger (as posted in the Ashland Times-Gazette)

9lasagna noodles, cooked and drained
1 green onion finely chopped
2 tablespoons vegetable oil
6 tablespoons butter or margarine, divided
cup chicken broth
1 (8-ounce) bottle clam juice
1 pound bay scallops or sea scallops, cut in quarters
1 pound small shrimp, peeled and deveined
1 (8-ounce) package imitation crabmeat, chopped
teaspoon ground white pepper, divided
cup butter or margarine
cup flour
1 cups milk
teaspoon salt
1 cup whipping cream
1 cup parmesan cheese divided

Saut onion in oil and 2 T margarine or butter until tender. Stir in broth and clam juice, bring to a boil. Add scallops, shrimp, crab and 1/8 tsp white pepper, return to a boil. Reduce heat, and simmer, uncovered, for 4 to 5 minutes, stirring gently, until shrimp turn pink and scallops are firm and opaque. Drain, reserving cooking liquid. Set seafood mixture aside.

Make a white sauce by melting 4T margarine or butter in a saucepan, stir in flour until smooth. Combine milk and reserved cooking liquid, gradually add to saucepan. Stir in salt and 1/8 tsp white pepper, bring to a boil, cook, stirring constantly, for 2 minutes or until thickened. Remove from heat and stir in whipping cream and c parmesan.

Measure out c of the white sauce and stir into seafood mixture.

Spread 1/2c white sauce in bottom of a greased deep 9x13-inch baking dish. Top with 3 noodles, spread with half the seafood mixture and 1 1/4c sauce. Repeat layers. Top with remaining noodles, sauce and 1/2 c parmesan. Bake, uncovered, at 350 degreees for 35 to 40 minutes or until golden brown. Let stand 15 minutes before serving.

Makes 12 servings.

Yummers

I am married to the Top Chef. Oh my! Our community paper features the recipes of a local cook each week. Recently, Nelson spied a recipe for seafood lasagna and he determined to give it a try. Let me repeat, oh my!

We started the meal with a fresh salad. Mine had strawberries and walnuts with Spinach Salad dressing. It was scrumptuous.

It was so cool how we already had crab legs in the freezer (a manager's special at the grocery several months ago) and the other seafood was on sale! He made everything last night, which was mean sort of tease, and then assembled it after we got home from church. Oh my! We were both licking out our bowls. The garlic bread sticks only sopped up so much, you know.

Then for dessert we split a Betty Crocker warm delights: double chocolate and peanut butter. I believe I've said it before, oh my!

We figured it out. The seafood lasagna cost about $3 a serving. And the pan made at least 6 servings. I had my playlist playing on the computer in the background so we had ambiance with our amazing food. And the conversation was nice, too.

That's not thunder you hear, it's me purring.
