Not the Worst, but certainly no Iron Chef

My husband is taking a serving of my stoup to work for a guy to try. He and this guy were talking about recipes and the guy asked Nelson if he knew any good soup recipes and Nelson told him he'd bring some in. He was quite pleasantly surprised when he got home and found out that I had made a batch. Here's the recipe. I mostly just dump things in the crock pot.

Mexican Chicken and Bean Stoup
2 cans black beans, strained and rinsed
2 cans Aldi's tomatoes and jalepenos
2 cups corn (I use the corn I froze in the summer)
1 cup shredded zucchini (I use some I froze in the summer)
1 container of frozen stewed tomatoes (or 1 can)
2 chicken breasts, I cook ahead and cut into small pieces
Spice to taste: I use galic powder, cummin, cilantro, and cayanne pepper
Optional: This last time I added some of the juice (about one cup) from homemade salsa for spice and extra liquid.

I mix it all in the crock pot and let it simmer for several hours. I like to laddle it over tortilla strips. Nelson sometimes adds sour cream.


It sure feels nice to have something I cook be so well liked.
